Job Description Responsible for the heavy‑duty cleaning and sanitation of kitchen equipment including stoves, hoods, ovens and appliances. Sanitation of stoves, ovens, grills, hoods and steam tables using various body movements—standing, reaching, climbing and stooping for periods of time. Change oil in the deep fryer—lift fryer and drain oil, either by lifting the fryer bucket and/or releasing the drain lever on the larger units. Clean fryer using scouring pad in a circular motion and replace oil. (These functions are intended as a general illustration of the work performed in this job classification and are not all inclusive for this position). Responsible for the tasks assigned by the Steward Assistant, Executive Steward and Supervisor. Coordinate materials and equipment to maintain cleanliness/sanitation of the work station, and communicate problems or concerns to supervisor or kitchen management. Must understand written English to read any caution or safety notices. Must perform substantial physical activity on a continuous basis throughout the shift, including work in confined spaces and awkward positions, requiring standing, crouching, kneeling, stooping, and reaching overhead. Must have sufficient manual dexterity to use scraper, griddle brick, scouring pad, towels, squeegee, and heavy‑duty gloves. Must be able to operate kitchen equipment, stoves and ovens. Must be able to operate heavy equipment, including high‑pressure steam cleaner, heavy‑floor scrubbers and other cleaning equipment. Must climb stairs and ladders to perform duties 100 percent of the time. Must work in unfavorable conditions that can occasionally be hot, noisy, and wet. Must check station before, during, and after the shift for proper set‑up and cleanliness. Must maintain a neat, clean, and well‑groomed appearance. Qualifications Related education and experience may be interchangeable on a year‑for‑year basis. One (1) year of kitchen cleaning experience. Must be flexible to work any day, any shift, including graveyard shift. Must be familiar with handling cleaning chemicals and compounds for all types of kitchen equipment. Must successfully complete the Serve Safe training class. Must possess, and must be able to obtain and maintain, a valid driver’s license and gaming license in the assigned state of employment or other jurisdictions. Must successfully pass background check.
