Blueberry Bakery in Jacksonville, FL is seeking a reliable and skilled Full-Time Overnight Baker to join our team. In this role, you will be responsible for preparing our full daily line of fresh pastries, artisan breads, and signature baked goods before sunrise to ensure our shop is fully stocked for morning customers.

Early Morning Preparation: Mix, shape, proof, and bake a variety of fresh breads, muffins, pastries, and house specialties following traditional and bakery-standard recipes.

Oven & Station Operation: Safely operate commercial baking equipment, including deck/convection ovens, large mixers, dough sheeters, and proofers.

Quality & Consistency: Ensure high standards for taste, texture, visual appearance, and portion control across all baked products.

Inventory & Prep Work: Assist with measuring, preparing ingredients (misen place), monitoring stock levels, and notifying management of needed supply orders.

Sanitation & Safety: Maintain a clean, organized, and sanitary workstation in compliance with health department guidelines and safety protocols.

Experience: Prior baking experience in a commercial bakery, restaurant, or high-volume food production environment preferred.

Schedule: Must be available to work consistent overnight and early morning hours, including weekends and holidays.

Physical Stamina: Ability to stand for long periods, lift heavy bags of flour and ingredients (up to 50 lbs), and work comfortably around hot ovens.
