WHAT YOU'LL BE DOING
- Trimming briskets, pork ribs, and pork butts to Little Miss BBQ standards
- Producing house-made sausage from scratch
- Hitting daily production schedules while monitoring yields and minimizing waste
- Following FIFO, food safety, and sanitation standards — without being reminded
- Organizing, labeling, and rotating inventory with precision
- Keeping your workstation clean and inspection-ready
- Working alongside Pit Masters and Kitchen Leadership to support daily operations
WHAT WE'RE LOOKING FOR
- Hands-on experience with meat fabrication, trimming, or butcher shop operations
- Strong knife skills and an eye for quality — you know what good looks like
- Ability to handle high volumes without cutting corners
- Dependable, organized, and self-motivated — no babysitting required
- Comfortable on your feet for full shifts and able to lift up to 50 lbs
- Available for early morning shifts and weekends
YOU'LL STAND OUT IF YOU HAVE
- High-volume butcher or meat processing experience
- Sausage-making experience
- USDA, HACCP, or food safety certification
- Background in a restaurant commissary, butcher shop, or meat processing facility
