Executive Pastry Chef, Viennoiserie and Kitchen Lead

Lead the kitchen at Tiny Croissanterie, a laminated pastry bakery in Sunnyvale built on a string of successful pop-ups. Our owner is a pastry chef who created the concept and the menu. Now we need the chef who turns it into a kitchen that runs to standard every day.

You will set the standard on the bench, build the team, and own the systems: recipes, production plans, ordering and training. You report directly to the owner and have the authority to build the kitchen the right way.

What you will do

• Lead daily production hands-on: croissant, danish and viennoiserie, from mix and lamination through shaping, proof and bake
• Hire, train and lead the AM and PM teams, including a PM Production Lead
• Put the standards in writing: recipe cards, step-by-step procedures with photos, and a training plan for every station
• Build the daily and weekly production plan and PAR levels from sales
• Own ordering and inventory within budget
• Report waste, sellable rate, cost per piece and kitchen labor to the owner each week
• Develop seasonal items with the owner

What we are looking for

• Five or more years in pastry or bakery production, with at least three leading a team
• Deep laminated dough experience and a clear grasp of the full lamination production cycle
• You write systems others can follow without you
• Clear, consistent, respectful leadership
• Early starts (from 5:00 AM), weekends and holiday volume; about 50 to 55 hours a week while we build the kitchen
• ServSafe Food Protection Manager certification, or certified within 30 days
• Able to lift up to 50 pounds, with or without a reasonable accommodation

What we offer

• $86,000 to $110,000 salary, based on experience
