The Wolf's Tailor of Id Est Hospitality Group is seeking back-of-house talent! We are hiring a full-time Morning Production Chef who is passionate about food and the hospitality industry. At least two years of prior culinary experience in a high-caliber environment are required to be considered for this role. This role requires early morning and weekend availability. Above all, we are seeking a driven, detail-obsessed individual who wants to be part of a fun, fast-paced work environment. • Break down primal cuts and portion proteins to restaurant specifications
• Produce fresh pasta daily to standardized recipes and quality benchmarks
• Maintain and manage active fermentation projects (schedules, temperatures, rotation, documentation)
• Prepare family meal daily for the team
• Execute all prep to standardized recipes, portion sizes, and quality standards
• Maintain a clean, organized, and sanitary workstation throughout and after production
• Follow storage and rotation guidelines (FIFO) to minimize waste and maintain freshness
• Manage time independently to complete a high volume of production tasks within a single shift, with minimal oversight
• Comply with health and safety regulations; enforce proper food handling, storage, and labeling practices to prevent foodborne illness

• 2+ years prior culinary experience in fine dining or an environment of similar caliber
• Demonstrated butchery skills, including breaking down primal cuts and portioning proteins
• Experience making fresh pasta
• Familiarity with fermentation techniques and processes (koji, pickling, curing, etc.) a strong plus
• Excellent time management skills — able to self-direct and prioritize a full production list solo
• Exceptional attention to detail and cleanliness standards; leaves the station better than they found it
• A "crusher" mentality: high output without sacrificing quality or consistency
• Strong knife skills and command of basic and advanced cooking techniques
• Comfortable working early mornings, largely independent of the evening line team
• Ability to stand for long periods of time and comfortably lift 50 lbs
• Open availability — must have weekend availability
