Restaurant Manager
Navy Region Mid-Atlantic Fleet and Family Readiness (FFR)
Summary This position is located in the Golf Branch, Food and Beverage Division, Morale, Welfare, and Recreation (MWR) department at Naval Station Great Lakes, Illinois. The incumbent is responsible for the day-to-day operation of this food and beverage program under the direct supervision of the Golf Branch Manager. Duties Plans, directs, and supervises restaurant and bar operations in multiple locations, including Buckley’s and on/off-site special events, managing food, bar sales, and mobile food sales. Interfaces with the Golf Branch Manager to plan menus, special events, programs, and internal controls. Determines prices for party menus and banquets, reviews contracts daily, and ensures arrangements meet contractual requirements. Manages food surpluses, checks preparation methods, sizes, and presentations, conducts inventories, and exercises supervisory control over all employees. Performs certain job functions, such as bartender or food preparation, during peak times or staffing shortages. Hires, trains, and motivates employees for quality operations. Provides on‑job training, prepares work schedules, approves or disapproves leave forms, interviews candidates, evaluates performance, and initiates personnel actions with the Golf Branch Manager. Manages food and bar controls and operational costs, ensuring proper cost calculation for labor, food, waste, and spoilage, and determines requirements and related supplies. Develops and maintains standardized recipes, inspects deliveries, maintains accountability for equipment and supplies, ensures sanitation and health inspection compliance, and maintains required records. Receives complaints from customers or subordinates regarding quality or service, investigates causes, and reports findings to the Golf Branch Manager. Performs other related duties as assigned. Requirements Must pass all applicable records and background checks. Must successfully pass the E‑Verify employment verification check. Must pass a Food Protection, Sanitation, and Alcohol Service Course within 30 days of onboarding and update annually. Starting May 7, 2025, non‑affiliated individuals requesting access will need a REAL‑ID‑compliant driver’s license or another acceptable form of identification to access CNRMA installations. Qualifications Resumes must include information demonstrating experience and knowledge, skills, and abilities (KSAs) related to this position. Applicants should be clear and specific when describing their experience levels and KSAs. Knowledge of management procedures and general business practices related to operational management of food and beverage programs, and effective utilization of restaurant/bar facilities and equipment. Knowledge of proper menu and recipe preparation; periodic review and adherence to safety and sanitation rules. Understanding of Navy regulations concerning food and beverage operations, purchasing, preparation, and inventory control. Ability to cost food and beverages. Proficiency in Microsoft Office programs (Word, Excel, PowerPoint, Outlook). Ability to perform full range of supervisory duties and communicate effectively both orally and in writing. Education There is no specific educational requirement for this position. Additional Information Salary is dependent on experience and/or education. Some positions require a one‑year probationary period and participation in Direct Deposit/Electronic Fund Transfer within the first 30 days.
