Restaurant Manager

Twin Peaks Restaurants

Position Overview We are looking for a leader with at least 2 years management experience in high-volume, full-service restaurants. The Assistant Manager must effectively work with all staff to ensure each guest is welcomed and entertained by attractive Twin Peaks Girls and served tasty scratch-made food and 29-degree beer. The Assistant Manager must also motivate all staff and maintain a fun, playful atmosphere, with a strong handle on profit and loss and inventory control. Essential Duties Daily Operations: Manage shifts, including decision making, scheduling, planning while upholding standards, product quality, and cleanliness; ensure a safe working and guest environment; provide daily direction to employees regarding operational and procedural issues. Hospitality: Ensure positive guest experience in all areas; respond to complaints, taking appropriate actions to turn dissatisfied guests into return guests; investigate and resolve complaints concerning food quality and service. Leadership: Effectively teach, motivate, coach, and discipline Twin Peaks Girls and kitchen crew; maintain a fun, playful atmosphere free of intimidation, discrimination, harassment, poor attitude, and poor work performance. Training: Train and develop hourly employees, providing and documenting coaching and evaluation; ensure Steps of Service are followed and motivate front‑of‑house staff to entertain and provide PEAKS service; hold kitchen staff accountable for the “10 Absolutes of a Twin Peaks Cook” and sanitation standards. Recruiting: Proactively recruit Twin Peaks Girls who meet or exceed brand image and costume standards. Employee Management: At the direction of the General Manager: hire, supervise, counsel, and train hourly employees; maintain updated training schedules, programs and materials; create daily shift schedules; handle discrimination or harassment issues in accordance with policy; complete accident/incident reports promptly. Financials: Ensure all financial and payroll related administrative duties are completed accurately, on time; estimate food and beverage costs; work with Corporate office staff for efficient provisioning and purchasing; supervise portion control; estimate food needs and place orders with distributors. Standards: Dress and act professionally; correct standards not met; adhere to company standards and service levels to increase sales and minimize costs; enforce sanitary practices; ensure compliance with operating standards, laws, and ordinances; maintain restaurant image; ensure alcohol served responsibly. Supervision Supervision Received: Report to the General Manager and Director of Operations. Supervision Exercised: All restaurant staff. Minimum Qualifications & Skills Substantial experience managing high-volume restaurants and/or bars. Proficiency in restaurant functions: food planning and preparation, purchasing, sanitation, security, policies and procedures, personnel management, recordkeeping, and reports. Ability to apply common-sense understanding to multi‑step instructions. Ability to handle quickly changing situations with many variables. Mathematical skills: compute proper change, checkout accuracy, and bank deposits. Complete required training and certifications (e.g., ServSafe, food or alcohol service certifications). Effective communication in English; Spanish skills helpful. High school diploma required. Knowledge of Microsoft Office (Word, Excel). Work Environment Regularly exposed to fumes or airborne particles from the kitchen. Occasionally exposed to wet or humid conditions in dish area or walk‑in cooler; possible exposure to toxic or caustic chemicals during cleaning. Noise level usually loud. May be exposed to cigarette or cigar smoke in smoking sections. Physical Demands Must regularly stand up to 10 hours; walk; use hands and fingers to handle or carry objects; talk or hear. Frequently reach with hands and arms; occasionally sit; lift up to 40 pounds. Specific vision abilities: close vision, peripheral vision, depth perception, adjust focus.
