Director of Food & Beverage

Lead the Culinary Experience of One of the Pacific Northwest's Premier Resort Destinations

Skamania Lodge is seeking a hospitality leader with a proven track record of operational excellence, team development, and financial performance to serve as our Director of Food & Beverage.

Nestled in the heart of the Columbia River Gorge, Skamania Lodge is a renowned destination resort offering an exceptional guest experience inspired by the natural beauty, culture, and agricultural abundance of the Pacific Northwest.

This executive leadership role will oversee a diverse and multi-faceted operation, including our signature Cascade Dining Room, River Rock Lounge, in-room dining, grab-and-go offerings, and an extensive banquet and catering operation supporting more than 24,000 square feet of meeting and event space. The Director of Food & Beverage will play a key role in shaping the culinary vision of the resort while delivering exceptional guest satisfaction, financial performance, employee engagement, and operational excellence.

Position Overview

The Director of Food & Beverage is responsible for the strategic leadership, financial performance, and day-to-day management of all restaurant, lounge, banquet, catering, stewarding, and beverage operations throughout the resort. This individual will partner closely with the Executive Chef and resort leadership team to ensure a seamless and elevated experience for guests across all dining outlets, meetings, weddings, corporate retreats, and special events.

Key Responsibilities
  • Provide overall leadership for all food and beverage operations, including restaurants, lounges, banquet facilities, catering, and beverage programs.
  • Drive revenue growth while maintaining strong cost controls and profitability.
  • Lead, mentor, and develop department leaders and team members through coaching, training, and succession planning.
  • Ensure exceptional guest satisfaction and consistently high service standards.
  • Oversee banquet and catering operations supporting conferences, corporate retreats, weddings, and social events.
  • Collaborate with culinary leadership on menu development, seasonal offerings, and innovative dining experiences that showcase the Pacific Northwest.
  • Develop and execute annual budgets, forecasts, and business plans.
  • Monitor labor productivity, food cost, beverage cost, and operational efficiencies.
  • Ensure compliance with all company, state, and federal food safety and beverage regulations.
  • Foster a culture focused on colleague engagement, accountability, and service excellence.
Desired Qualifications
  • Minimum 5+ years of progressive food and beverage leadership experience in a full-service hotel, resort, or conference center environment.
  • Prior experience as a Director of Food & Beverage preferred.
  • Demonstrated success overseeing multiple food and beverage outlets and significant banquet/catering operations.
  • Experience managing large-scale conference, convention, and social event business.
  • Strong financial acumen with responsibility for budgeting, forecasting, labor management, and profitability.
  • Proven ability to lead and develop large, multi-department teams.
  • Knowledge of food trends, wine and beverage programs, and elevated guest experiences.
  • Luxury, independent resort, or destination resort experience preferred.
  • Bachelor's degree in Hospitality Management, Business, or a related field preferred.
