Pastry Assistant

Job Description We are seeking a Pastry Assistant to join our team at Buck Russell’s Bakery in Wilmette. This role supports the Pastry Chef in decorating cakes and cookies, baking, and ice cream production. The position requires a passion for creativity and the ability to thrive in a fast‑paced, team‑oriented environment. Essential Duties and Responsibilities: Prepare and bake pastries according to recipes and instructions from the Executive Chef and Culinary Directors. Develop different types of ice cream flavors following the Pastry Chef’s recipe and SOPs. Assist in organizing and cleaning pastry preparation and pantry areas. Assist with the preparation of pastries and ice cream for wholesale and store level. Ensure all pastry preparation and presentation meets established specifications. Maintain consistency of product with great attention to quality, taste and presentation. Build positive working relations with all other departments. Follow and comply with established procedures, including Weights and Measures, health and sanitation, and adhere to safe work practices. Perform other duties as assigned. Qualifications: Understand basic yeast dough such as breads, laminated dough such as croissants, and puff pastry. Knowledge of bakery products, production baking experience, and customer service experience preferred. Previous experience in ice cream production preferred. Ability to follow instructions and procedures. Ability to remain calm during high volume service or difficult situations. Ability to communicate and understand English language. Ability to work varied shifts, including nights, weekends and holidays. Maintain ServeSafe Food Handlers certification. At least 21 years of age. High school diploma or equivalent work experience.
