Bludorn, owned and operated by Michelin-starred, James Beard-nominated Chef Aaron Bludorn, is seeking a talented, passionate, and motivated hospitality professional to serve as Assistant General Manager for our newest restaurant, Bludorn San Antonio — not yet open. This is a rare opportunity to join a pre-opening team, help shape service standards and culture from day one, and grow into a leadership role as the restaurant establishes itself in a new market.

The ideal candidate is a hands-on, guest-obsessed leader with fine dining or upscale hospitality experience who thrives in the energy of an opening and wants to build something lasting alongside a dedicated team.

What You'll Do

• Partner with the General Manager on all aspects of pre-opening: hiring, training, systems setup, and vendor coordination
• Recruit, interview, and help train the front-of-house team, instilling Bludorn's hospitality standards from day one
• Lead nightly service, managing the floor, guest relations, and staff performance in real time
• Support scheduling, labor management, and daily/weekly financial reporting
• Uphold and help develop SOPs for service, safety, and cleanliness
• Handle guest concerns with professionalism and a solutions-first mindset
• Collaborate closely with the culinary team to ensure a seamless guest experience
• Assist with inventory, ordering, and vendor relationships as needed
• Step in as manager-on-duty and support the GM in day-to-day operations

What We're Looking For

• 1+ years of experience as an Assistant General Manager, Floor Manager, or similar leadership role in an upscale or fine-dining restaurant
• Experience with a restaurant opening or new concept launch strongly preferred
• Strong knowledge of food, wine, and hospitality service standards
• Proven ability to lead, motivate, and develop a team
• Excellent communication and problem-solving skills under pressure
• Working knowledge of POS systems, scheduling software, and basic P&L management
• Flexibility to work nights, weekends, and holidays, with availability increasing as we approach opening
• TABC and Food Handler certification (or ability to obtain prior to opening)
