Propósito de la Posición: el sous chef ayuda al chef ejecutivo en las actividades diarias de la cocina, incluido el desarrollo del menú, el inventario, la compra de suministros y el control de costos. Responsabilidades Esenciales: Responsable de la logística de la cocina cuando el chef está ausente o ayudar al chef cuando está presente (programación, nómina, descripciones del menú). Asistir con la capacitación alimentaria del personal y la generación de los materiales de capacitación necesarios (crear recetas que puedan seguir, programar degustaciones para mantener la calidad del producto constante, enseñar sobre los ingredientes y su origen, etc.). Gestión de personal / mano de obra Revisar y gestionar continuamente el desempeño de todo el personal culinario y compartir comentarios con el chef (supervisar a todos los cocineros y su trabajo, asesorar cuando se necesiten mejoras, avisar a directiva si hay problemas, etc.). Comprender, seguir y orientar a otros en los procedimientos de seguridad actuales. Presentación de comida / producto Mantenga la calidad y la presentación de la comida para lograr comentarios y reseñas favorables de los huéspedes en Open Table y otros sitios, incluidas las redes sociales, etc. Ayude y haga la preparación de los platos mientras capacita a otros para lograr la consistencia. Cree continuamente nuevas ofertas (especiales y cambios de menú de temporada). Financiero Seguir los procedimientos de la empresa para garantizar que los pedidos de alimentos sean correctos y precisos. Mantener un inventario adecuado de los alimentos: asegúrese de que no se agoten y de que estén siempre frescos, etc. Mantener comunicación con la gerencia de FOH sobre el inventario de porcelana necesario para la ejecución de todos los menús. Administrativo Asistir al chef en cambios de menú de la mano con el costeo y la degustación al Director de operaciones y propiedad. Asistir al chef en procedimientos cuando se trate de cambios en el menú (presentar los platos, crear descripciones del menú, organizar la degustación para el personal de servicio de manera oportuna, etc.). Mantener actualizada toda la documentación culinaria y del equipo, incluidos, entre otros: Deberes laborales y listas de verificación de apertura/cierre. Manual de operaciones de alimentos / Libro de recetas. Formularios de personal, como papeleo de nueva contratación, formulario de terminación, etc. (solicite instrucciones a los gerentes si es necesario). Comuníquese y trabaje en estrecha colaboración con el equipo de relaciones públicas para destacar las ofertas de alimentos y responder a las consultas de los medios. Asistir a todas las reuniones solicitadas por el chef. Consultar la correspondencia (OUTLOOK) de la empresa para todas las comunicaciones entrantes por correo electrónico. Participar en los informes de Avero / Mantenerse al día con los informes diarios. Asegurar el cumplimiento de todas las reglas y regulaciones del departamento de salud para pasar las inspecciones. Requisitos Esenciales Mínimos: La habilidad de trabajar como parte de un equipo. Conocimiento básico de preparación de comida, experiencia en limpieza es bienvenida. Habilidad para comunicarse y comprender instrucciones en inglés para garantizar la seguridad en el lugar de trabajo. Capacidad para comprender, responder y interactuar con compañeros de trabajo, gerentes y invitados en inglés. Habilidad de manejar el tiempo y capaz de trabajar bajo presión y manejar altos volúmenes de producción. Habilidades de comprensión de lectura y hablado. Disciplina para seguir direcciones y estándares establecidos. Habilidad de levantar hasta 50 lbs.
