Kitchen Supervisor

Assists chefs in preparations and seasonings of soups, meats, vegetables, desserts and other foodstuffs for consumption in various Garden City, Inc. dba Casino M8trix outlets and supervises kitchen staff.

Responsibilities include maintaining compliance with all applicable Title 16, Minimum Internal Control Standards, State Gaming Regulations, and other City/State/Federal laws/regulations. Must maintain knowledge of and ensure compliance with all Garden City, Inc. dba Casino M8trix operating policies/procedures/practices, and internal control protocols including a thorough knowledge of cash and chip control procedures. Ability to produce quality and large volume food orders; work in crowded and confined kitchen environment; knowledgeable in various ethnic recipes and the ability to supervise staff.

Job Tasks

1. Responsible for consistently maintaining a smooth-running operation in the kitchen.
2. Monitor quality of daily preparation and all food product and presentation.
3. Oversee all aspects of the daily operation of the kitchen and food production areas.
4. Forecast and schedule staff according to regular or special event occupancy levels.
5. Control the maintenance and cleanliness of the kitchen and equipment to ensure a safe and healthy environment.
6. Monitor all current inventories and prepare end of the month inventories.
7. Responsible for ordering and requisitioning of food supplies. Control usage of all food items.
8. Establish and control payroll and other operating expenses.
9. Manage profitability through forecasting and staffing.
10. Maintain labor and food costs within budget.
11. Coordinate and monitor all phases of loss prevention in kitchen areas.
12. Utilize a hands-on approach to training, coaching, and developing kitchen staff.
13. Work all stations on the line to assist when busy or provide breaks.
14. Conduct food safety audit.
15. Compute food cost.
16. Conduct staff performance reviews.
17. Design, implement, and monitor promotions, specials, and employee menu.
18. Organize and conduct departmental meetings and on-going HACCP program training.
19. Maintain communication with all departments.
20. Develop proper training and direction in compliance with company standards of quality, specifications, portion control, recipes, etc.
21. Create menus, specials or promotions.
22. Check food purchases for proper ordering, quality, and price structure.
23. Maintain high employee morale, promote staff enthusiasm, and teamwork to minimize turnover.
24. Assist employees with concerns and support staff in their job functions.
25. Respond to complaints and management requests in a timely manner.
26. Approach all encounters with, managers, supervisors, and fellow employees in an attentive, friendly, courteous, and service-oriented manner.
27. Be attentive, friendly, helpful, and courteous to all, managers, supervisors, and fellow employees at all times.
28. Maintain a warm and friendly demeanor at all times.
29. Work and cooperate with managers and keep them informed of any issues as they arise. Keep immediate supervisor fully informed of all problems or matters required his/her attention.
30. Prepare and submit required reports in a timely manner.
31. Attend all meetings/training and participate in programs as required.
32. Maintain regular attendance in compliance with Garden City, Inc. dba Casino M8trix standards.
33. Possess ability to work irregular hours, nights, and weekends, as required by scheduling which will vary according to the needs of the business and changes or reduction in the work force.
34. Give advance written notice of, and all of the reasons for, requests to change assignment or job position.
35. Maintain high standards of personal appearance and grooming, which include the proper uniform, professional attire, and nametag when working.
36. Know, enforce, comply, and adhere to standards and procedures, federal, state, and local laws and regulations concerning the service of alcoholic beverages, health, safety, sanitation, and other requirements. Encourage safe and efficient operations.
37. Hold in strictest confidence any confidential or proprietary information relating to the business of Garden City, Inc. dba Casino M8trix, vendors, and co-workers.
38. Convey information and ideas clearly.
39. Show initiative in job performance, including anticipating what needs to be done before it becomes a necessity.
40. Work well in stressful, high-pressure situations. Maintain composure and objectivity under pressure.
41. Be effective at listening to, understanding, clarifying, and resolving the concerns and issues raised by co-workers. Evaluate and select among alternative courses of action quickly and accurately.
42. Handle problems in the workplace, including anticipating, preventing, identifying, and solving problems as necessary.
43. Understand job description and accept responsibility for knowing the modifications and/or changes in the job description as any of the tasks may be modified or changed.
44. Perform any other duties as assigned.

Experience

AA degree or technical training or at least one-year related experience. 1-3 years supervisory experience.

Knowledge/Skills/Abilities

Requires knowledge of food preparation and general awareness of presentation as well as basic math and bookkeeping procedures. Skill in preparing food and communicating with a cross section of employees. Ability to work in a fast-paced environment under pressure. Ability to speak, write and understand basic English.

Must be available to work weekends and holidays.

Compensation and Benefits

This is a salaried, exempt position. Pay scale for this position is $80,000 - $100,000 annually (depending on experience).
