Pomelo is the hotel’s rooftop pool bar, inspired by the Mediterranean. Hotel guests may lounge poolside or enjoy a cabana-side cocktail with the Texas sunset. Pomelo is open for hotel guests and private membership club only. Job Functions Assist the other Barbacks and bartenders in monitoring and coordinating the day-to-day operations of their section during each shift and ensure all FOH SOPs are followed and executed. Interact with staff at all levels in a fast-paced environment, remaining flexible, proactive, resourceful, and professional with confidentiality. Deliver spotless service to all guests, fulfilling their needs and expectations down to the smallest details. Maintain equipment and arrange for maintenance/repairs; report defects to the Restaurant Manager. Greet guests warmly and provide a pleasant experience. Understand food, wine, cocktails, coffee, and beers. Work in a fast-paced, customer-service-oriented environment; perform duties under pressure and meet deadlines. Work as part of a team and independently; take instructions from Manager. Exercise problem-solving skills and interact with co-workers, Managers, guests, and the public professionally. Engage guests in appropriate conversation reflecting current events when relevant. Communicate effectively with the restaurant manager, servers, and host/hostess to ensure an enjoyable guest experience. Engage guests with a pleasant greeting and take drink orders per bar service standards. Slice and pit fruit for garnishes; check food before serving for appearance and temperature. Perform duties safely and monitor others’ actions; be pleasant, hospitable, and attentive to guests. Be knowledgeable of HHG information to assist guests at any time. Relay guest complaints/comments to the Manager. Maintain daily bar cleanliness and organization before, during, and after shifts; stock coolers/side stations daily as required. Arrange bottles and glasses attractively and follow HHG beverage procedures. Complete opening/closing duties (side work) and stock bar as needed; take physical inventory of specified items daily. Sanitation and Equipment Maintain and strictly abide by state sanitation/health regulations and HHG requirements. Maintain proper storage procedures per Health Department and restaurant requirements. Instruct staff in correct usage and care of kitchen machinery, emphasizing safety. Meetings & Communication Be available for mandatory restaurant meetings or trainings. Report any major product defects or guest issues immediately and take corrective actions. Ensure smooth communication with direct reports and other Restaurant Managers/Supervisors. Attire, Language, and Behavior Always neatly dressed and groomed; behave and speak according to HHG standards of excellence. Treat all associates with respect and consideration, regardless of position. High-volume restaurant experience strongly preferred. High School diploma or equivalent strongly preferred.
