Corrections Food Service Coordinator (Tillamook) South Fork Forest Camp – Tillamook, Oregon About the Job – Your Role As Food Service Coordinator you will manage daily food operations within a correctional facility, ensure meals are prepared safely and serve on time, and lead adults in custody (AICs) who participate in work programs to develop valuable skills. Responsibilities Coordinate, assign, and supervise AIC work crews; enforce rules, procedures, and security; provide training and evaluate performance; maintain discipline and cleanliness; conduct contraband searches; monitor timecards and work area conditions. Lead AICs in preparing and cooking meals per menus and recipes; operate commercial kitchen equipment; ensure proper portioning and quality; assist with special diets and suggest menu changes; plan cooking schedules and minimize food waste. Oversee cleaning and sanitation of kitchen and equipment; enforce proper food storage and hygiene; manage dishwashing temperatures and supply rotation. Perform inventory checks; requisition supplies; verify deliveries; assist with food ordering; direct unloading and storage of supplies. Maintain records of food prepared and served, leftover quantities, inventory, and AIC work hours. Enforce security protocols, including inspections and searches of AICs for contraband. Minimum Qualifications High school diploma, GED, or equivalent. One (1) year of experience in a commercial food service facility, full‑service restaurant, or similar establishment; or an associate's degree in Food Service Management, Foods and Hospitality Service, or a directly‑related field. Must obtain a Food Handlers Permit within 30 days of hire. Required Skills Team/crew management of up to 20 or more individuals. Experience supervising and/or leading a kitchen (restaurant, school cafeteria, military dining, government or private food establishment). Demonstrated cooking experience across a variety of foods (vegetables, desserts, breads, main entrees). Knowledge of progressive cooking to minimize food waste; understanding of food temperature safety zones. Ability to instruct work crews in sanitation procedures and maintain a positive work environment while enforcing order.
