AM/PM Jr. Sous Chef/Lead Line Cook

Henrietta, an elevated bistro and sandwich shop in Echo Park, is searching for a Jr. Sous Chef / Lead Line Cook to join our team. We've had an amazing first year and as we expand our hours and our team, we are looking for both AM and PM leads to work alongside our cooks, chef and culinary partner as we head in to year 2.
We are looking for a high-energy, ambitious cooks who work hard, want to sharpen their skills and grow into leadership with one of LA's best new restaurants.
We are looking for leads for both AM and PM shifts or both. Please let us know if you are available for AM, PM or both.
Essential Duties & Responsibilities
- Line Leadership: Cook and command stations during high-volume lunch, brunch, and dinner while ensuring the highest standards
- Prep & Execution: Collaborate directly with the Executive Chef on daily scratch prep, sauce work, butchery, and sandwich build-outs.
- Team Guidance: Support and mentor line cooks, ensuring station setup, plating, and food quality meet restaurant standards.
- Kitchen Operations: Maintain strict health, safety, and sanitation standards. Oversee station organization, labeling, and proper stock rotation (FIFO).
- Sourcing: Work alongside our head chef to search for the best ingridents and shop at the farms market multiple times a week.
Qualifications & Skills
- Experience: Minimum 2 years of line cooking experience in a high-volume, scratch kitchen (bistro, fine-dining, or chef-driven restaurant experience preferred).
- Mindset: Eager to learn, coachable, brings high urgency, and maintains a positive, zero-ego attitude.
- Leadership: Strong communication skills under pressure with the desire to step into management.
- Availability: Ability to work flexible schedules including weekends (AM or PM).
