Food Production ManagerAramark Healthcare+ is searching for a Food Production Manager (Kitchen Manager) to oversee the day to day kitchen operations for the Food & Nutrition Department at the Hospital University of Pennsylvania, located in Philadelphia, PA. Reporting to the Executive Chef, the Food Production Manager plans, administers and directs all unit activities related to food production and kitchen operations, complying with the standards established by Aramark Healthcare+, regulatory agencies and client. Leads food production staff. Establishes and maintains effective working relationships with other departments to provide a unified food service experience for patients, residents, visitors and employees.Job ResponsibilitiesManages production for 3 points of service: patient feeding, front of the house retail operations and catering.Management of food cost, food safety and waste controls.Train and manage kitchen personnel and supervise/coordinate all related culinary activitiesRecords inventory and Estimate food consumption and requisition or purchase foodSelect and develop recipes as well as standardize production recipes to ensure consistent qualityEstablish presentation technique and quality standards, and plan and price menusEnsure proper equipment operation/maintenance and ensure proper safety and sanitation in kitchenOversee special catering events and may also offer culinary instruction and/or demonstrates culinary techniquesAssists with managing patient feeding and retail operations as needed.QualificationsRequires at least 2 years' experience in a kitchen management role.Bachelor's degree or equivalent experience.Healthcare experience preferred.Culinary Arts degree desired.SERV Safe certification or HACCP knowledge required.Experience with production systems is required.
