Summary:

We are seeking a detail-oriented and eager-to-learn Sushi Prep Assistant to support our Sushi Chefs. In this role, you will assist with sushi rice preparation, vegetable cutting, ingredient preparation and portioning, basic assembly, and maintaining a clean and organized sushi station. This is an excellent opportunity for individuals looking to develop their skills and gain hands-on experience in sushi preparation.

Responsibilities:

• Sushi Ingredient Preparation: Wash, peel, and precisely cut vegetables such as cucumbers, avocados, and carrots, and prepare garnishes and other ingredients for sushi production.
• Rice Preparation: Cook, season, and handle sushi rice according to company recipes, SOPs, and temperature guidelines.
• Chef Support: Assist Sushi Chefs with ingredient preparation, restocking, basic assembly, and other assigned production support tasks.
• Food Portioning: Accurately weigh and portion ingredients according to recipes and production standards to ensure consistency and control waste.
• Food Safety & Sanitation: Follow all applicable food safety and health regulations, including proper handling, storage, temperature control, and cross-contamination prevention.
• Kitchen Cleaning: Maintain clean and sanitized sushi prep tables, cutting boards, rice cookers, utensils, and other assigned equipment throughout the shift.
• Inventory & Waste Control: Assist with receiving and organizing ingredients, follow FIFO requirements, and minimize food waste through proper preparation, portioning, and storage.
• Production Support: Complete assigned prep and production support tasks efficiently to ensure Sushi Chefs have the ingredients and supplies needed for daily production.

Qualifications:

• Education: High school diploma, GED, or equivalent is required.
• Experience: Prior kitchen or food preparation experience is preferred but not required. Entry-level candidates who are willing to learn are welcome. Formal culinary education or training may be considered in lieu of professional kitchen experience.
• Mandatory Certification: A valid Food Preparation Certificate / Food Handler Certificate is required prior to starting.
• Knife Skills: Basic knife skills with a willingness to learn and develop safe, precise cutting techniques.
• Pace & Adaptability: Ability to stay organized, work efficiently, and maintain accuracy in a fast-paced, high-volume environment.
• Attention to Detail: Ability to follow recipes, portion standards, food preparation procedures, and quality requirements accurately.
• Cleanliness & Food Safety: Strong commitment to maintaining a clean, organized, and sanitary work environment.
• Teamwork & Reliability: Dependable, punctual, and able to follow instructions and work effectively with Sushi Chefs and other team members.
• Communication: Strong communication and interpersonal skills.
• Must be legally authorized to work in the United States without sponsorship.

Physical Requirements:

• This job requires the ability to perform the following essential functions:

  • Must be able to lift, carry, and move items weighing up to 50 pounds.

Working Conditions:

• This job is performed in a production environment that may have exposure to heat, noise, and other environmental factors associated with food production.

Position Details:

• Employment Type: Full-Time & Part-Time.

  • Other nearby 99 Ranch locations.

• Schedules:

  • Standard Shifts: 8:00 AM to 3:00 PM.
  • 2nd Shift: 12:00 PM to 8:00 PM.
