Position Overview Inspector V – Meat Safety Assurance Section, Dept of State Health Services (Texas). Salary range $4,263.16–$6,779.25 monthly. Shift Day; Additional: Days (First). Telework not eligible. Closing Date 06/10/2026. Location Houston; may be assigned to Humble and surrounding counties, headquarters assignment may change. Job Description Under supervision of the Meat Safety Assurance Circuit Manager and Unit Manager, perform complex inspections, investigations, and quality assurance reviews at establishments authorized to perform livestock slaughter and/or meat/poultry processing operations. Evaluate and review procedures, prepare reports and correspondence. Conduct inspections under Federal/State cooperative inspection program (USDA‑FSIS). Travel up to 75%. Provide emergency disaster response support as needed. Maintain an acceptable driving record and operate state or personal vehicle. Essential Job Functions 50%: Evaluate compliance of slaughter and processing establishments; perform ante‑mortem and post‑mortem inspections; conduct sanitation inspections; verify food safety systems (SPS, SSOP, HACCP); document non‑compliance on NR; evaluate corrective actions. 15%: Receive inspection schedules, report results via computer and email; record findings; prepare technical reports; coordinate coverage among establishments. 10%: Monitor microbiological sampling and collect tissue samples; submit to labs. 10%: Evaluate formulas, methods, labeling compliance; recommend compliance; stay informed on changes. 10%: Research policies and regulations; serve as liaison between management and facilities. 5%: Other duties: recognize zoonotic diseases, serve as relief inspector, promote public education, disaster response. Maintain valid Class C Texas driver’s license; safe vehicle operation. Knowledge, Skills and Abilities Thorough knowledge of livestock slaughter and poultry processing phases. Knowledge of SPS, SSOP, HACCP, humane slaughter, pathogen reduction. Inspection protocols for HACCP establishments. State and Federal laws, rules, regulations, directives. Veterinary medicine principles, animal/human disease prevention, zoonosis control. Insect and rodent control regulations. Basic evidence rules. Inspection skills, use of tools, sample collection. Basic mathematics. Report writing, data analysis, training others. Interpretation of labels and technical documents. Interpersonal communication. Color vision test (pass). Computer proficiency (word, spreadsheets, email). Licensure and Certifications Must possess a valid Class C (or higher) Texas driver’s license or equivalent from another state. Crew must have certification for the USDA Food Safety Inspection Methods (IM) or complete required training. Initial Screening Criteria Required: Graduation from a standard senior high school or equivalent. Preferred (not required): College or university coursework relevant to animal/food science, livestock slaughter, or meat/poultry processing. Degree from accredited two‑ or four‑year institution. Training from USDA‑FSIS in SPS, SSOP, HACCP, humane slaughter or food microbiology. Experience in public health, animal health, or related field. Experience in livestock slaughter or meat/poultry processing operations. Experience with state or federal laws, regulations. Experience in regulatory or quality control positions. Experience writing reports and presenting information. Experience using computers for word processing, spreadsheets and email. Experience in public contact roles. Additional Information May be required to work outside official hours, evenings, weekends, and holidays. May need to perform other duties such as relief inspection and public education.
