Floor Manager — Republic Chophouse & Mangiare

Pay: $22 – $27 / hour, based on experience

Schedule: Full-time, hourly. Nights, weekends, and holidays required.

Location: Downtown Green Bay — Republic Chophouse and Mangiare Italian Restaurant (both locations, 1 block apart).

Reports to: General Manager

About the Role

We're a two-restaurant, locally owned group in downtown Green Bay — Republic Chophouse (upscale steakhouse) and Mangiare Italian Restaurant (small independent Italian). This role floats between both. You might run Friday at Republic and Saturday at Mangiare. One GM oversees both locations, and you're their eyes and hands on the floor when they're not there.

The Role

You run the shift — the whole operation. Open the restaurant, run pre-shift, set the pace during service, communicate with the line, check ticket times, handle problem tables, back up expo when the kitchen is buried, collect cash outs, lock up. When the GM and Chef aren't on-site, you are the manager on duty.

What You'll Do — Front of House

• Open or close the restaurant — floor setup, station checks, staff issues, product stocking.

• Run pre-shift with servers, bussers, and bartenders — specials, 86'd items, VIPs, pace.

• Own the floor during service — greet, seat, walk the room, read tables, keep pace.

• Handle guest issues on the spot — comps, remakes, recovery. Escalate only when you have to.

• Enforce alcohol service and responsible beverage standards.

• Cover floor stations when short-staffed — server, bar, host — whatever the night needs.

What You'll Do — Back of House

• Communicate with the team during service — timing, allergies, VIP tickets, table holds.

• Back up expo when the kitchen is slammed — check ticket times, pace, board load.

• Handle dishes that come back — talk to the guest, talk to the cook, get it right.

• On certain days, own the full close — floor and kitchen — sanitation, walk-ins, hoods off, doors set.

What We're Looking For

• 2+ years as a Floor Manager, Shift Supervisor, or Assistant Manager in a full-service restaurant.

• Comfortable running a floor solo — you don't need someone looking over your shoulder.

• Comfortable in the kitchen — can jump on expo, talk to cooks, and handle a dish that comes back.

• Experience with Toast POS

• Cool under pressure. Good with a difficult guest. Faster with a solution than an excuse.

• Fine working across two restaurants and two menus — variety is part of the job, not a bug.

• Current ServSafe and Responsible Beverage Server (or willing to obtain within 60 days — we pay for it).

• Available nights, weekends, and holidays.

• Able to stand for 8+ hours, lift 40 lbs, and move quickly through a full dining room.
