About Sfoglina

Sfoglina (sfoal-yee-nah) is Chef Fabio Trabocchi's tribute to the Italian dolce vita and the centuries-old tradition of handmade pasta.

Inspired by Italy's legendary female pasta makers, our pasta is handcrafted daily in open pasta rooms where guests can experience the artistry firsthand. Alongside our fresh pastas, Sfoglina offers seasonal salads, classic Italian appetizers, seafood and meat entrées, authentic desserts, thoughtfully selected wines, handcrafted cocktails, and welcoming neighborhood hospitality in beautifully designed spaces.

Position Summary

As Restaurant Manager, you will help lead daily operations while fostering a culture of hospitality, accountability, and teamwork. You will be responsible for maintaining our high standards of service, coaching and developing staff, driving operational excellence, and ensuring every guest enjoys an exceptional dining experience.

Responsibilities

• Lead daily front-of-house operations while maintaining Fabio Trabocchi Restaurants' service standards
• Coach, mentor, and develop front-of-house team members
• Ensure opening, service, side work, and closing responsibilities are completed to standard
• Maintain exceptional guest satisfaction through visible floor leadership
• Promote clear communication between front-of-house and culinary teams
• Monitor labor, productivity, and operational costs
• Assist with staffing, scheduling, training, and performance management
• Maintain compliance with company policies, safety standards, and health regulations
• Help drive restaurant profitability while preserving an outstanding guest experience

Qualifications

• Minimum of 2 years of management experience in a high-volume upscale or fine dining restaurant
• Passion for hospitality and guest service excellence
• Proven leadership and team development skills
• Strong organizational and communication abilities
• Professional appearance and demeanor appropriate for a premier restaurant
• Ability to stand and walk for extended periods
• Flexible availability, including evenings, weekends, and holidays
