They are responsible for preparing ingredients—such as chopping vegetables, portioning meats, and making sauces and bread.By completing these foundational tasks, they ensure line cooks can assemble and plate dishes quickly during busy service hours.
Key Responsibilities
- Food Preparation: Washing, peeling, chopping, slicing, and dicing vegetables, fruits, and proteins.
- Recipe Components: Measuring ingredients and preparing foundational items like stocks, soups, marinades, and salad dressings.
- Inventory & Stocking: Organizing walk-in coolers, rotating stock, and labeling food items according to health and safety standards
- Station Setup: Supplying the main line cooks with fresh, readily available ingredients before service begins.
