Focaccia Prep Cook / Pinsa & Focaccia Sandwich Line Cook – Italian Restaurant

Job Summary:

We are looking for a skilled and reliable Focaccia Prep Cook / Pinsa Romana & Sandwich Line Cook to join our kitchen team. This position is responsible for preparing fresh focaccia dough, managing the focaccia station, assembling pinsas and sandwiches, and maintaining quality and consistency during service.

The ideal candidate has experience with dough preparation, Italian cuisine, and working efficiently in a fast-paced kitchen environment.

Responsibilities:

• Prepare and portion focaccia dough following recipes and quality standards.
• Manage dough fermentation, proofing, and preparation for daily service.
• Bake and finish focaccia products with consistent quality.
• Assemble focaccia-based sandwiches with proper portions and presentation.
• Prepare pinsas and other menu items according to restaurant standards.
• Manage the pinsa romana/focaccia station during service.
• Maintain proper ingredient levels and complete daily prep.
• Follow food safety, sanitation, and cleanliness standards.
• Work closely with the kitchen team to ensure smooth service.
• Maintain an organized and efficient workstation.

Requirements:

• Previous kitchen or line cook experience preferred.
• Experience with focaccia dough, bread preparation, or Italian cuisine is a plus.
• Understanding of dough handling, fermentation, and baking processes.
• Ability to work independently and maintain consistency.
• Strong attention to detail and organization.
• Reliable, positive attitude, and team-oriented.
