Ambrosia Hollywood, a Modern Mediterranean fine dining restaurant in Los Angeles, is seeking an experienced Floor Manager / Advisor to lead and help build a high-level, detail-driven operation. This role is for a hands-on professional who understands the full restaurant operation — from service and staff management to systems, bar operations, and overall guest experience — while also providing strategic guidance as an advisor.

Responsibilities:

• Oversee daily front-of-house operations and service standards
• Set up and implement operational systems, procedures, and training
• Develop and structure bar operations, including workflow and standards
• Provide operational guidance and advisory support to ownership
• Maintain a high level of guest experience and service consistency
• Hire, train, and lead staff with discipline and professionalism
• Work closely with ownership and kitchen to build a cohesive concept

Qualifications:

• Strong fine dining or upscale restaurant experience
• Proven ability to build systems and structure from the ground up
• Knowledge of wine and sommelier-level service (certification is a plus)
• Leadership, organization, and attention to detail
• Ability to perform under pressure in a fast-paced environment
