Sushi Line Cook

DESCRIPTION

Our Sushi Line Cooks are responsible for prepping, setting up, and executing our sushi menu while also supporting the salad/cold station and dessert preparation . This position plays an important role in delivering fresh, consistent, beautifully presented food while maintaining the highest standards of quality, cleanliness, sanitation, and food safety.

As a Sushi Line Cook, you will work with fresh seafood, raw ingredients, vegetables, rice, sauces, and other prepared items while following Mission recipes, specifications, and proper portioning standards. You will be a member of a fast-paced, cohesive kitchen team that communicates, supports one another, and takes pride in creating an unforgettable guest experience.

What You Will Do

• Understand and embrace our Guest-Obsessed culture and do whatever it takes to create a positive and memorable guest experience.
• Set up, stock, and maintain the sushi and cold stations for service.
• Prepare and execute sushi rolls, sashimi, nigiri, and other sushi menu items according to established recipes and presentation standards.
• Prepare and execute salads, cold menu items, and desserts as assigned.
• Properly prepare and handle raw seafood, vegetables, rice, sauces, garnishes, and other ingredients.
• Follow strict recipes, portioning standards, and plating specifications to ensure consistency.
• Read and prioritize tickets to determine what items need to be prepared and when.
• Maintain proper food temperatures, storage, labeling, rotation, and FIFO procedures.
• Follow all food safety and sanitation standards, especially those related to handling raw seafood and ready-to-eat foods.
• Maintain a clean, organized, and properly stocked station throughout the entire shift.
• Clean and sanitize station floors, counters, knives, tools, cutting boards, equipment, and preparation surfaces.
• Communicate effectively with fellow cooks, chefs, managers, and service team members during busy service periods.
• Assist with prep, stocking, breakdown, and cleaning responsibilities before and after service.
• Take pride in food quality, presentation, consistency, and speed of execution.

What We Are Looking For

• Previous sushi, line cook, or professional kitchen experience preferred.
• Knowledge of sushi preparation and proper raw seafood handling is strongly preferred.
• Ability to safely and confidently use knives and kitchen equipment.
• Strong attention to detail, organization, cleanliness, and presentation.
• Ability to follow recipes and maintain consistent portioning and quality.
• Ability to work efficiently and remain organized in a fast-paced environment.
• Strong communication skills and a team-first attitude.
• Commitment to food safety, sanitation, and cleanliness standards.
• Availability to work nights, weekends, and holidays as required.

REQUIREMENTS

• Prepare sushi ingredients and assemble rolls to order with consistent quality and presentation
• Maintain proper food safety, sanitation, and allergen practices throughout prep and service
• Store, rotate, and label seafood and produce according to health and safety guidelines
• Knife skills and portioning accuracy for fish, vegetables, and garnishes
• Follow Mission Beach House recipes, plating standards, and station procedures
• Ability to work efficiently in a fast-paced sushi line during peak service
• Collaborate with kitchen and service teams to ensure timely order fulfillment
• Maintain cleanliness of the sushi station, tools, and cutting boards before, during, and after shifts
• Monitor ingredient freshness and communicate needs to the kitchen lead promptly
• Support cross-training and assist with other kitchen tasks as needed
