Head Sushi Chef

Overview At Osaka, sushi is at the center of the experience. We are looking for a Head Sushi Chef with strong fundamentals, refined technique, and the leadership to guide a focused, high-performing team. This is a hands-on role for someone who respects the product, values precision, and understands that consistency is what earns trust from both guests and colleagues. You will lead the sushi bar through daily service, ensuring every element — from rice to fish to final presentation — meets the standards of Osaka’s Nikkei cuisine. Just as important, you will help cultivate a kitchen culture built on professionalism, respect, and collaboration. You’ll be responsible for organizing prep, maintaining quality and cleanliness, mentoring sushi cooks, and keeping the team aligned during fast-paced services. The ideal candidate remains calm under pressure, communicates clearly, and leads by example rather than ego. Experience with premium seafood, proper handling and storage, and high-volume execution is essential. Familiarity with contemporary Japanese or Nikkei cuisine is strongly preferred. We are looking for someone who brings: Responsibilities 4–6 years of professional sushi kitchen experience Leadership experience guiding a team or station Strong knife skills and understanding of sushi fundamentals Attention to detail and pride in consistency Organization and time management The ability to perform at a high level during busy service Professionalism, reliability, and a collaborative mindset Food safety certification (or willingness to obtain) Experience in upscale or internationally recognized restaurants is highly valued, as is a genuine interest in mentoring others and contributing to a strong, stable team environment.
