Sushi Line Cooks play a critical role in ensuring every plate meets recipe standards, presentation expectations, and food safety requirements. Your Role on the Sushi Line As a Sushi Line Cook at Cannonball, you are responsible for the consistent preparation and execution of sushi menu items during service. You will focus on station readiness, knife work, portioning, and quality control while working efficiently behind the line. You will follow established recipes and food safety standards while collaborating closely with kitchen leadership and teammates to support smooth service and successful events. What You'll Be Doing Sushi Preparation and Station Execution Prepare sushi menu items including rolls, nigiri, sashimi, and designated side items in accordance with established recipes and portion standardsExecute sushi production efficiently during high-volume service while maintaining consistency and presentationPerform knife work including cutting, slicing, and portioning raw fish and ingredients according to station requirementsMaintain station readiness throughout service by ensuring tools, equipment, and prepared ingredients are properly stocked and organized Food Safety, Hygiene, and Sanitation Follow all Department of Health (DOH), food safety, and sanitation guidelines at all timesClean and sanitize knives, utensils, tools, and equipment before use and as required throughout the shiftMaintain a clean, organized workstation to prevent cross-contaminationProperly store, label, rotate, and handle raw fish and ingredients in compliance with food safety standards Ingredient Quality and Inventory Support Inspect fish, seafood, produce, and other ingredients prior to preparation to ensure quality standards are metNotify kitchen leadership promptly if ingredients do not meet quality expectationsAssist with monitoring food stock levels and participating in routine inventory countsReplenish sushi service lines as needed to support continuous serviceRestock and reset the workstation to prepare for the next shift Service and Event Support Coordinate with kitchen leadership to support smooth service flow during regular operationsAssist with special dinners or events that may require limited guest-facing sushi preparation when assignedFollow allergy information and special requests as communicated by kitchen leadership Professional Conduct and Teamwork Work collaboratively with cooks, dishwashers, and kitchen leadership to support efficient kitchen operationsFollow direction from the Chef de Cuisine, Sous Chef, and Kitchen LeadsMaintain composure, focus, and efficiency during peak business periodsFollow all company policies, grooming standards, and kitchen proceduresPerform other duties as assigned and as trained to support kitchen operations Who You Are Detail oriented and committed to consistency, quality, and presentationComfortable working in a fast-paced, high-volume kitchen environmentConfident performing knife work, preparation, and station executionSafety minded with a strong understanding of food safety, sanitation, and hygiene standards, or eager to learn and follow them preciselyAble to stay calm, focused, and efficient during busy service periodsA team player who communicates clearly and works well with kitchen teammates and leadershipReliable, responsible, and committed to maintaining high culinary standards every shift Belmont Park LLC is an Equal Opportunity Employer.
