Accordingly, if you will now or in the future require sponsorship for employment visa status this moratorium may affect our ability to employ you should you be selected as the final candidate*-------------------------------------------------------------------------------------------------------------------------------The Meat Science Laboratory Technician, under general supervision, oversees the processing of beef, pork, and lamb carcasses and maintains the sanitation of the Meat Laboratory.***This position is funded by a grant or restricted funds. Continued employment is contingent on the renewal of grant or restricted funds.******The salary is determined in accordance with the University’s compensation structure and will be commensurate with the candidates’ education and experience, within the assigned salary range for this position.*****Responsibilities*** Assist in maintaining HACCP, SOPs and food safety records. Assist with demonstrations in labs for teaching, research and extension programs.* Maintain equipment and facilities. Distribute all meat items (packaging, storing, shipping, etc.).* Fabricate carcasses into roasts, chops, steaks and other standard cuts. Process carcasses from slaughter to cooler. Make sausages, ground meats, cutlets, value-added products and cured and smoked products.* Assist with demonstrations in labs for teaching, research and extension programs.* Performs other duties as assigned.**Required Education and Experience:*** High School diploma or equivalent combination of education and experience.* Five years of related experience in the meat industry.**Required Knowledge, Skills, and Abilities:*** Knowledge of Hazard Analysis and Critical Control Points (HACCP) and Food Safety and Inspection Service (FSIS) procedures.* Ability to multitask and work cooperatively with others.* Ability to harvest and process beef, lamb, and pork.**Preferred Qualifications:*** Bachelor’s degree in Animal or Food Science or closely related field* Six years of related experience in the meat industry* Previous university meat production facility experience or meats judging experience is a plus**Job Posting Close Date:*** Open Until Filled**Required Attachments:**Please attach all required documents listed below in the attachment box labeled as either “Resume/CV or Resume/Cover Letter” on the application.
