Job Summary Under the direction of the Senior Manager, Food & Beverage, the Manager, Food & Beverage is responsible for the overall operation and profitability of assigned venues, developing and maintaining well-performing teams and achieving financial and enterprise objectives. The role includes maintaining proper inventory control, ensuring high-quality customer service, compliance with health and safety regulations, reviewing scheduling and staffing plans, preparing sales, inventory and personnel reports, providing dedicated leadership to the venue(s), and maximizing team member morale. Key Responsibilities Accountable for all Front of House (FOH) team members assigned to the venue(s). Implement training programs to ensure high-quality service that aligns with Yaamava’s brand standards and maintain overall product knowledge. Ensure optimal operations during business hours by monitoring customer satisfaction and resolving complaints. Direct the development and administration of controls for all phases of FOH operations in an economical and profitable manner while maintaining brand standards. Manage assigned venue(s) to budget revenue, food cost, expense, headcount, and profit. Explain unfavorable variances monthly, prepare and implement a plan of action to track favorably to budget, including forecast as needed. Collaborate with the assigned venue Chef to oversee food costs, keeping them within budget, ensuring menu items remain attractive to customers, and verifying presentation meets brand standards. Maintain accurate inventory of all china, glassware and cutlery, ensuring adequate supplies, minimizing replacement cost, and preventing waste. Oversee venue cleanliness and sanitation, direct maintenance of all equipment according to schedules, order repairs, and recommend replacements when warranted. Perform other duties as assigned to support efficient operation of the department. Supervisory Responsibilities Responsibility include interviewing, hiring and training employees; planning, assigning, reviewing and directing work; evaluating and appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems. The manager makes hiring decisions and designs individual development plans with succession planning in mind for all key roles. Education, Experience and Qualifications Bachelor’s degree in Hospitality Management, Food Service, Business or related field required. Minimum of three (3) years of restaurant or related hospitality experience required, with bar experience strongly preferred. Minimum of three (3) years of supervisory experience required. Related, relevant, or direct experience may be considered in lieu of minimum educational requirements. Knowledge, Skills and Abilities (KSA) Proficiency in Microsoft Office (Outlook, Excel, Word). Strong leadership and people management skills with the ability to collaborate, motivate others, communicate change effectively, overcome resistance, build commitment. Ability to delegate, multi‑task, lead, and prioritize effectively in a dynamic, fast‑paced environment with demonstrated organizational and time‑management skills. Maintain strict confidentiality and act consistently with all legal and regulatory requirements. Read, write and communicate in the English language. Perform simple mathematical operations (addition, subtraction, multiplication, division). Provide friendly and efficient service to guests and team members, addressing needs and resolving issues. Work under pressure, staying calm and efficient during busy periods. Required Licenses, Certifications and Registrations Responsible Beverage Service (RBS) certification. ServSafe certification. Gaming license at the discretion of the San Manuel Tribal Gaming Commission. Valid driver’s license and vehicle insurance with minimum liability limits (no operation of Tribe-owned vehicles). Physical Requirements / Working Conditions – Environment Primary work environment is a climate‑controlled Casino & Resort setting. The role requires travel to meetings, trade shows, and conferences and may require evening, weekend and holiday shifts. The manager must operate in a fast‑paced, high‑demand environment, occasionally lifting up to 10 pounds and sometimes moving up to 40 pounds. The work is largely sedentary, involving sitting most of the time while operating computer and other office machinery. Physical activities include balancing, stooping, kneeling, crouching, reaching, pushing, pulling, lifting, grasping, speaking, hearing, and repetitive motions. Hearing sufficient to hear conversational levels in person, via videoconference and telephone. Visual acuity for detailed activities, reading, and inspection of employees, visitors, and facilities. Mobility to move safely in an office environment and operate a motor vehicle for travel to events. Endurance to sit, walk and stand for extended periods, and maintain efficiency throughout full shifts. Appearance must be neat, clean, and well‑groomed according to departmental policy. The employee may be exposed to fumes, airborne particles, and secondhand smoke.
