Head Baker / Operations Lead
Lisbonata is looking for an experienced Head Baker / Operations Lead to join our team in Brooklyn, NYC.
We’re searching for someone who thrives in a fast-paced production environment, takes ownership, and is excited to help scale a modern Pasteis de Nata bakery brand focused on quality, consistency, and hospitality.
Responsibilities- Lead and manage daily bakery production operations
- Ensure production targets and quality standards are consistently met
- Oversee prep, baking, organization, and inventory flow
- Create and manage team schedules
- Train and supervise bakery staff
- Maintain cleanliness, food safety, and operational systems
- Improve workflow efficiency and kitchen organization
- Work closely with ownership on growth and expansion initiatives
- 3+ years experience in a Head Baker or bakery leadership position
- Strong lamination knowledge and experience is a must
- Strong operational and organizational skills
- Experience managing teams in a production environment
- Ability to lead by example and work hands-on during service and production
- Reliable, detail-oriented, and proactive mindset
- Passion for quality-driven food businesses
- 45-50 hours per week
- 65.000$ - 75.000$ salary
