Qualifications You should have a minimum of 3‑4 years’ experience of food preparation, preferably in an upscale/fine dining restaurant, and basic supervision of the line. Full knowledge of the Health Department regulations regarding sanitation and food handling. Full knowledge of all stations in the kitchen and mastery of each.
