Summary:

We are seeking a skilled and detail-oriented Sushi Chef to independently prepare and produce high-quality sushi, sashimi, and related products in a fast-paced kitchen environment. This role requires strong knife skills, precision in handling and preparing seafood, and a commitment to consistent product quality, presentation, food safety, and sanitation.

Responsibilities:

• Sushi Production: Independently prepare a variety of sushi rolls, nigiri, sashimi, and other specialty sushi items according to company recipes, SOPs, and quality standards.
• Ingredient Preparation: Properly butcher, cure, and slice fish and seafood. Prepare sushi rice, vegetables, and garnishes daily.
• Recipe & Portion Control: Follow standardized recipes and portion standards to ensure consistent taste, quality, and yield.
• Quality Assurance & Presentation: Maintain consistent standards for taste, texture, portion accuracy, freshness, and visual presentation.
• Food Safety & Sanitation: Follow all applicable food safety and health regulations, including proper handling, storage, and temperature control of seafood.
• Kitchen Cleanliness: Keep the sushi station, cutting boards, knives, equipment, and display cases clean and sanitized throughout the shift.
• Production Efficiency: Meet production timelines and maintain sufficient product availability without sacrificing quality or food safety.
• Inventory & Waste Control: Monitor ingredient inventory, follow FIFO, maximize product yield, and minimize food waste through proper preparation and portioning.

Qualifications:

• Education: High school diploma, GED, or equivalent is required.
• Experience: Prior experience in sushi production is required. Advanced or specialty sushi experience is highly preferred. Formal culinary school education with a focus on Japanese cuisine/sushi may be considered in lieu of professional experience.
• Mandatory Certification: A valid Food Preparation Certificate / Food Handler Certificate is strictly required prior to starting.
• Knife Skills: Strong, safe, and precise knife skills for preparing and slicing fish, seafood, and other sushi ingredients.
• Pace & Adaptability: Proven ability to maintain high quality and precision in a high-volume, fast-paced environment.
• Attention to Detail: A keen eye for portion accuracy, food quality, and beautiful visual presentation.
• Teamwork: Excellent communication skills and a collaborative attitude to work smoothly with prep assistants and front-of-house staff.
• Attendance & Team Fit: Consistent punctuality, reliability, and a positive contribution to the team.
• Strong communication and interpersonal skills.
• Must be legally authorized to work in the United States without sponsorship.

Physical Requirements:

• This job requires the ability to perform the following essential functions:
  • Must be able to lift, carry, and move items weighing up to 50 pounds.

Working Conditions:

• This job is performed in a production environment that may have exposure to heat, noise, and other environmental factors associated with food production.

  • Standard Shifts: 8:00 AM to 3:00 PM.
  • 2nd Shift: 12:00 PM to 8:00 PM.
