About the Role As the Retail Seafood General Manager, you will oversee every aspect of the market’s operations—from purchasing and inventory to team leadership, kitchen coordination, merchandising, and customer service. This is not a desk job. You’ll be on the floor, in the walk‑in, at the counter, and working closely with vendors to ensure the highest standards of freshness, quality, and efficiency. You’ll lead a tight‑knit team, maintain impeccable product presentation, and drive a culture of excellence rooted in hospitality and craftsmanship. Key Responsibilities Source fresh fish, shellfish, and specialty products from boats, distributors, and regional suppliers. Negotiate pricing, delivery schedules, and purchasing terms. Build order guides based on seasonality, sales trends, and inventory needs. Inspect all incoming product for quality, temperature, and accuracy. Maintain strong vendor relationships to ensure consistent quality and value. Oversee receiving, rotation, par levels, and inventory counts. Monitor margins, cost of goods, and retail pricing. Reduce waste through spoilage tracking, trim utilization, and shrink analysis. Reconcile invoices and resolve discrepancies promptly.Oversee a small prepared foods kitchen and daily production. Ensure recipe consistency, portion accuracy, and packaging standards. Coordinate with the kitchen to minimize waste and maximize product usage. Maintain food safety logs, sanitation standards, and compliance. Manage POS menus, pricing, discounts, and reporting. Execute opening/closing procedures, cash handling, and deposits. Maintain a beautifully merchandised, fully iced, and properly labeled seafood case. Ensure the market is clean, organized, and customer‑ready at all times. Hire, train, schedule, and develop both retail and kitchen staff. Set clear expectations and coach in real time. Align labor with sales volume and operational needs. Customer Experience & Food Safety Lead from the counter—assist customers, make recommendations, manage special orders. Uphold all food safety, allergen, and sanitation standards. Own health inspections and regulatory compliance. What We’re Looking For 3+ years of leadership experience in a seafood market, fish counter, or fresh protein retail environment. Strong hands‑on knowledge of whole fish, fillets, shellfish, and shelf life. Proven purchasing and vendor negotiation skills. Excellent inventory control and waste‑management discipline. Experience overseeing a prepared foods or to‑go kitchen. Proficiency with Toast POS or similar systems. Demonstrated success in cost control and shrink reduction. ServSafe Manager certification (or ability to obtain quickly). Ability to lift 50+ lbs and work in cold, wet conditions. Weekend, holiday, and seasonal availability. Nice to Have Existing relationships with regional seafood suppliers. Culinary or prepared foods development experience. Recipe costing or menu engineering background.
