Executive Steward

A premier, full-service resort destination in sunny San Diego, CA is looking to bring on an experienced Executive Steward to oversee the back-of-house culinary and back-of-house operational strategy. Position Responsibilities Lead, coach, schedule, and develop a large stewarding team operating across multiple dining outlets, bars, and expansive banquet venues. Maintain all kitchen, banquet, and food service areas in strict compliance with local health department regulations, OSHA standards, and safety guidelines. Oversee full-scale warewashing operations to ensure china, glassware, flatware, cookware, and equipment are clean, sanitized, and fully prepped for high-volume service. Manage inventory control for cleaning supplies, chemicals, smallwares, and operational equipment. Collaborate with the Executive Chef, Banquet Chef, Food & Beverage management, and Engineering to maintain high operational efficiency. Design and execute strategic staffing models tailored to large convention schedules, weddings, seasonal demands, and special events. Direct waste management procedures, ensuring proper disposal, recycling, grease, and food waste handling. Manage departmental labor costs, operational productivity, and budget lines without compromising quality or cleanliness. Conduct ongoing training programs centered on sanitation, chemical safety, equipment maintenance, and workplace safety protocols. Maintain preventive maintenance records for stewarding equipment and coordinate servicing with the facilities team. Position Requirements Minimum 5 years of stewarding experience in a high-volume hotel, resort, convention center, or large-scale hospitality setting. At least 2 years of direct management or leadership experience guiding kitchen support and stewarding teams. Demonstrated history supporting large-scale convention and complex banquet operations. Thorough knowledge of food safety guidelines, sanitation standards, HACCP principles, and regulatory health compliance. Proven background in chemical handling procedures, OSHA requirements, and workplace safety rules. Demonstrated leadership ability to prioritize multi-outlet demands, stay calm under pressure, and foster a team-first environment. Strong organizational, verbal communication, and problem-solving abilities. Flexibility to work varied schedules including evenings, weekends, and holidays based on business needs.
