Grill Team Member – Commissary

Position Summary

The Grill Team Member is responsible for preparing and grilling poultry and vegetables in a high-volume commissary kitchen. This position ensures that all grilled products are prepared safely, consistently, and according to established recipes, portion standards, cooking procedures, and quality requirements.

The Grill Team works closely with the commissary production team to maintain an efficient workflow and ensure grilled products are ready for distribution and service.

Key Responsibilities

· Prepare poultry and vegetables for grilling according to established recipes and production procedures.

· Operate grills and related kitchen equipment safely and efficiently.

· Cook poultry and vegetables to required temperatures and quality standards.

· Monitor cooking times, temperatures, portions, and product quality throughout production.

· Maintain consistency in flavor, appearance, texture, and portion size.

· Follow all food safety, sanitation, and personal hygiene standards.

· Prevent cross-contamination by properly handling raw and cooked foods.

· Properly label, date, store, and rotate prepared products.

· Maintain a clean and organized grill station and surrounding work area.

· Clean and sanitize grills, tools, equipment, and food-contact surfaces throughout the shift.

· Communicate with team members and supervisors regarding production needs, product quality, and equipment issues.

· Follow daily production schedules and meet expected production timelines.

· Minimize food waste while maintaining product quality and safety.

· Assist with other commissary kitchen duties as needed.

Qualifications

· Previous kitchen, restaurant, food production, or grilling experience preferred but not required.

· Ability to follow recipes, procedures, and food safety requirements accurately.

· Ability to work efficiently in a fast-paced, production-focused environment.

· Strong attention to detail and consistency.

· Ability to work as part of a team.

· Reliable attendance and punctuality.

· Ability to safely handle hot grills, cooking equipment, and food products.

· Ability to stand for extended periods and perform repetitive tasks.

Food Safety & Quality Standards

The Grill Team Member is expected to consistently follow company food safety procedures, including proper cooking temperatures, food handling, sanitation, storage, labeling, and prevention of cross-contamination.

Product must meet established standards for temperature, appearance, texture, seasoning, portion, and overall quality before being released to the next stage of production.

Physical Requirements

· Ability to stand and walk for extended periods.

· Ability to lift and move food products, containers, and kitchen supplies.

· Ability to work around heat, steam, and cooking equipment.

· Ability to perform repetitive movements such as lifting, reaching, cutting, and handling food.

· Ability to wear required personal protective equipment and follow workplace safety procedures.
