Key Responsibilities (High-Impact Execution)

• High-Volume Whole Carcass Breakdown: Drive rail-to-counter fabrication, precision quartering, and rapid breakdown of whole animal carcasses (beef, pork, goat, lamb, and wild game).
• Custom Cut Mastery: Read and execute custom cut sheets with speed and accuracy—crafting premium steaks, roasts, specialty trims, and custom burger blends.
• Commercial Equipment Operations: Command commercial bandsaws, high-capacity grinders, sausage stuffers, vacuum sealers, and thermal labeling systems.
• Shop Leadership & Quality: Set the pace for efficiency, maintain razor-sharp sanitation standards, and help guide shop workflow during peak seasons.

Preferred Qualifications & Attributes

• High-volume wild game processing experience (venison season hustle).
• Experience with custom curing, smoking, or specialty sausage formulation.
• Ambitious mindset with a desire to take on shop management or lead butcher responsibilities.
