Style to customer specifications. Maintain style pace to labor standards. Identify all retail beef or pork product specifications. Identify all retail beef or pork packaging specifications. Understand grade, enhancement, ascorbic acid requirements. Understand Food Safety, GMP, SSOP requirements. Maintain product flow and procedures. Understand muscle orientation and different primals. Understand production schedule and rotation of items. Understand table position rotation/assignment based on production schedule. Training provided onsite. Exposure and Risk Cold, wet, damp environment. Standing for prolonged periods of time. Uneven walking surfaces and slippery floors. The Ideal Candidate A solid work history, previous manufacturing or food processing experience preferred. An eye for detail and a passion for quality. Willingness to work in a fast‑paced, cold environment performing repetitive work. Excellent communication skills.
