Responsibilities:

Monitor all oven cooks and dry room. Pull finished cooks and test out for employees to dump for morning production. Perform CCP's and temperature monitoring checks. Re-load and unload ovens. Weigh out and label spices for next day's production.

Work Instructions:

Check ovens at start of shift and monitor when expected cooks should end

• Monitor temperature checks that need performed
• Perform any CCP (temperature checks) when needed and document on cook log
• Perform direct observation when needed and ensure direct observations are being performed when an employee is available on all CCP’s
• Following oven loading instructions
• Cooking instructions left by 1st shift will include what oven to cook and when to start them
• Monitor any cooks that take longer than normal to test out to ensure we can adjust cooks as needed
• Move ovens to dry room to continue drying if needed to ensure ovens can be loaded on time
• Move grease pans to any carts that need them prior to loading
• Follow all GMP’s and Allergen controls
• Ensure raw materials are being loaded in white coats
• Drain grease pans from carts when needed
• Ensure ready to eat products are being unloaded in blue coats with rack pullers
• Dumping
• Ensure that carts are sufficiently cooled prior to employees dumping
• Monitor employees dumping carts to make sure lugs are tagged accordingly and allergens are separated
• Once employees have finished dumping make sure they clean up the area they were working in
• Making spices
• In between testing ovens weigh out spices and label accordingly for next day's production
• Scan in all spices through vistatrak into the correct batches
• shift is Monday-Friday from 2:45pm until midnight
