Bread Baker

We’re looking for experienced, passionate and creative bread bakers to join the team at Thea! 

Thea is the Fort Greene project from Chef Tomer Blechman of Miss Ada, Nili and Theodora. The bakery is a continuation of the work we are doing at Theodora, centered around warm hospitality, fresh baked bread and pastries, house-made provisions and a creative sandwich program. 

The bread team is responsible for Thea's retail bread, bread for Thea sandwiches, and Theodora sourdough and flatbreads. We make a wide variety of bread - including high hydration sourdough, baguettes, ciabatta, flatbread, pita, pan loaves, white bread, and Jerusalem bagels - and we're passionate about using local grains and non-wheat varieties. We constantly experiment and refine our products by using new grains and flours, adjusting our recipes, and finding creative ways to use seasonal, local ingredients for our revolving seasonal flatbreads and focaccias.

We’re looking for bread bakers who are willing to work hard and excited to learn about bread. We're a small, collaborative, and high-energy team looking for candidates with a positive attitude and effective communication skills.

The ideal candidate has:

• Experience mixing dough - specifically sourdough, yeasted dough, and enriched dough
• Experience shaping bread - including high-hydration loaves, baguettes, and ciabatta
• Proofing, and baking bread in a deck oven
• Ability to work cleanly and efficiently
• A passion for bread and desire to keep learning

The role:

• Mixing, proofing, shaping, and baking bread
• Prep work including scaling ingredients, sprouting grains, and preparing seasonal ingredients
• Full time (40 hours) with one weekend shift
• 4 day work week (5 am to 3 pm)

Physical Requirements:

• Be able to stand for extended periods of time [over 7 hours]

• Be able to lift and carry 50 pounds steadily 

• Be comfortable bending, sitting, walking extended distances including up and down flights of stairs, and moving. 

• Be comfortable walking up and down stairs frequently, including while carrying large containers
