Position Summary

The Cook II / Lead is a working supervisory position responsible for leading food preparation, meal production, serving line operations, sanitation, and kitchen support activities at the Nevada Air National Guard Dining Facility (DFAC). This position performs hands-on cooking and cleaning duties while overseeing food service workers during drill weekend operations. The Cook II / Lead ensures meals are prepared and served in accordance with Armed Forces Recipe Service standards, Air Force sanitation requirements, and all contract performance standards.

Compensation - $25.55 per hour ($20.00 per hour wage PLUS $5.55 per hour for benefits).

Must be able to pass background check for access to military base.

Essential Duties and Responsibilities

Food Preparation & Cooking

• Lead preparation, cooking, serving, and cleanup of DFAC meals during scheduled drill weekends and quarterly meal events.
• Prepare menu items in accordance with Armed Forces Recipe Service recipes and Government-approved production logs and menus.
• Prepare and oversee production for main serving line, short order line, salad bar, and dessert area.
• Ensure food products maintain proper appearance, taste, smell, portion control, and safe holding temperatures.
• Coordinate meal setup and serving line operations in accordance with Food Service Production Logs.

Supervisory / Lead Responsibilities

• Serve as working lead over cooks and food service workers during assigned shifts.
• Direct and monitor employee performance to ensure uninterrupted food service operations.
• Ensure compliance with food safety standards, personal hygiene requirements, uniform requirements, and Government sanitation standards.
• Assist management with training, work assignments, shift coordination, and operational oversight.
• Maintain professional communication with Government personnel and facility representatives.

Serving Line Operations

• Maintain serving lines continuously during meal service.
• Ensure food is served in standard portions and in an attractive and professional manner.
• Ensure sufficient staffing and support to maintain required serving throughput.
• Replenish food and supplies throughout service periods.

Cleaning & Sanitation Duties

This is a working lead position that includes extensive hands-on cleaning and sanitation responsibilities.

Kitchen & Warewashing

• Clean and sanitize dishes, pots, pans, food preparation equipment, kitchen work areas, serving areas, and dining areas.
• Clean and sanitize serving lines immediately following spills and after meal service.
• Clean floor drains after each meal period.

Floor Care & Facility Cleaning

• Perform sweeping, wet mopping, damp mopping, washing, spot cleaning, and vacuuming of carpeted areas.
• Maintain floors free of dirt, food debris, standing water, grease, dust, and residue.
• Clean entrances, exits, sidewalks, walls, doors, and other facility surfaces to maintain professional appearance standards.

Dining Area Sanitation

• Clean and sanitize dining tables and chairs continuously during operations.
• Restock dining supplies including napkins, condiments, salt and pepper, and beverage supplies.
• Monitor beverage dispensers, coffee urns, ice machines, and related equipment for cleanliness and availability.

Restroom Cleaning

• Clean and restock kitchen-area restrooms daily, including mopping and sanitization.

Qualifications

• Experience in commercial, institutional, military, or cafeteria food service operations preferred.
• Prior leadership or supervisory experience preferred.
• Ability to lead employees while performing hands-on operational duties.
• Knowledge of food safety, sanitation practices, commercial kitchen operations, and serving line procedures.

Certifications & Training Requirements

• Must possess or obtain ServSafe certification.
• Must complete food handler training, AT Level I training, and OPSEC training.
• Must be authorized to work in United States.

Work Schedule

• Primarily drill weekends (Saturday and Sunday), one weekend per month
• Quarterly breakfast meal support required.
• Holiday and surge operations may require extended hours

Physical Requirements

• Ability to stand for extended periods.
• Ability to lift and carry food service supplies and equipment.
• Ability to work in hot kitchen environments and perform repetitive cleaning duties.
