Senior Cook Evenings

Job Overview Senior Cook – Primary City/State: Sun City West, Arizona. Department: Culinary & Nutrition - Hosp. Shift: Evening (Thursday–Monday 12pm‑8:30pm; weekends and holidays required). This role prepares fresh hot foods for production and retail services, and assists with patient and special event food service. Responsibilities Prepare fresh hot foods for production and retail. Assist with patient, retail dining, and special event food service. Perform dishwashing, food prep, unboxing foods and supplies, pulling new inventory, and restocking shelves while providing premier customer service. Core Functions Prepare all food items according to standardized recipes and adjust quantities for correct yields. Plan food production timing and quantities per daily orders, menu tally sheets, and production assignments. In case of shortage, determine menu substitutions in coordination with dietetics for regular and café menus. Minimize food waste through appropriate planning and tracking; record shortages and excess quantities per department procedure. Check and log food and equipment temperatures and report any problems; read thermometers and follow safety requirements. Maintain par levels of food and supplies; order and restock items per established routines, rotate food stocks, and check freshness dates. Keep assigned work areas clean and orderly; report equipment repair needs. Receive and check deliveries from vendors; may affect menu planning and oversee production quality when needed. Work under general supervision; lead and share cooking and food preparation knowledge with kitchen staff; handle inter‑department responsibilities and external customers in café or catering assignments. Minimum Qualifications High school diploma, GED, or equivalent working knowledge. At least two years of similar production cooking experience or institutional food production experience. Solid understanding of cooking principles, menu substitutions, and modified recipes for prescribed diets. Demonstrated ability in hot food production and use of all required commercial kitchen equipment. Capacity to learn and follow policies, read and understand written and verbal instruction, and communicate effectively. Proficiency in math calculations for recipe weights and production amounts. Knowledge of food handling regulations and ability to pass certification tests as required. Capacity to perform tasks within limited time frames and follow production and cleaning schedules; safe chemical use. Food handler’s card required within 30 days of hire for Banner Staffing Services team members. Preferred Qualifications Additional related education and/or experience.
