La Raviole Française is bringing a modern, premium fast-casual concept to New York City, built around ravioles — delicate French pasta — served with artisanal sauces and warm hospitality.

Our first restaurant opens in Midtown Manhattan this fall, with ambitions to expand across New York and eventually nationally. This is a rare opportunity to become a founding member of a new fast-casual French concept — working directly with the founders to build the team, culture, and operating systems from day one, and help shape the future of a growing restaurant brand.

The Opportunity

We're looking for an entrepreneurial, highly hands-on General Manager to join the founding team of La Raviole Française.

This is not a traditional office-based management role. During service, the General Manager is an active member of the fast-casual counter team — welcoming guests, taking orders, operating the register, explaining the concept, and stepping into other stations whenever needed. Outside peak service, the GM leads daily operations, team development, and financial performance.

You'll work directly with the founders to launch the first location, establish its culture, and create the operating standards future restaurants will follow. As the company expands, this role has the potential to grow into a multi-unit leadership position.

What You'll Do

Pre-Opening and Launch

• Lead restaurant operations through the pre-opening period
• Recruit, interview, hire, and onboard the founding team
• Develop training programs, service standards, and daily operating procedures for a fast-casual, counter-service environment
• Help configure restaurant systems, including POS, scheduling, inventory, and reporting
• Lead the team through launch and initial stabilization

Hands-On Service Leadership

• Serve as a productive member of the operating team during service

• Welcome guests, take orders, operate the register, and guide first-time guests through the menu
• Coordinate dine-in, takeout, and delivery orders and monitor ticket times and flow

• Resolve guest concerns with professionalism and empathy

• Lead by example, staying visible and engaged throughout service

Restaurant Operations & Financial Performance

• Oversee daily opening, service, and closing activities
• Create schedules and deploy the team efficiently for a high-volume, fast-casual pace
• Manage ordering, receiving, inventory, and vendor relationships
• Own restaurant-level profitability: monitor sales, labor, food costs, and waste
• Review operating results regularly and work with founders on sales and profitability targets

Food Quality, Safety & Team Leadership

• Maintain high standards of food quality, consistency, and presentation

• Ensure compliance with NYC Department of Health requirements

• Recruit, train, and develop a hospitality-driven team
• Build a culture based on ownership, respect, accountability, and continuous improvement

Growth & Community

• Collaborate with marketing on launch initiatives, local partnerships, and events

• Represent La Raviole Française within the Midtown community

• Contribute operating insights as the company prepares for future locations

Who You Are

You think like an owner, take initiative, and are comfortable working alongside your team at every station. You enjoy building fast-casual teams and systems from the ground up, are equally comfortable serving a guest and reviewing a P&L, and stay calm and solutions-oriented under pressure. You understand no task is beneath the General Manager and want to help build a growing company.

Qualifications

• Previous experience as a General Manager or strong Assistant GM, ideally in fast-casual, café, bakery, or other counter-service/high-volume operations

• Restaurant pre-opening experience strongly preferred

• Demonstrated experience recruiting, training, and developing teams
• Strong understanding of restaurant financials, including P&L, labor, food cost, and inventory
• Knowledge of NYC food-safety and DOH requirements
• Comfortable with modern restaurant technology (POS, scheduling, inventory, reporting)
• Professional fluency in English; French-language ability a plus

• Current NYC Food Protection Certificate or willingness to obtain one before opening

• Legally authorized to work in the United States (no visa sponsorship available)

Availability

Full-time, in-person, Midtown Manhattan. Flexibility required during pre-opening and launch, including mornings, evenings, weekends, and holidays as needed.

Compensation and Benefits

• Annual salary of $80,000–$100,000, depending on experience
• Performance-based bonus
• Paid time off
