BAR MANAGER | POMELO

Orlando, FL | Approximately $20/hour + Service-Based Incentive | New Restaurant Opening

Pomelo is seeking a talented, hands-on Bar Manager to help lead the beverage program for our opening in Orlando.

Led by Chef Hung Huynh , Pomelo is a new 120-seat, cocktail-focused restaurant featuring refined-casual dishes inspired by Vietnamese, Thai, and Southeast Asian cuisines.

We're looking for someone who understands that a great bar program requires more than great drinks. It requires consistency, organization, training, hospitality, cost awareness, and a leader who isn't afraid to jump behind the bar when service gets busy.

Compensation: Approximately $20/hour plus a service-based incentive
Tentative Start: End of November 2026

• Oversee daily bar operations and service standards

• Lead, train, coach, and support the bartending team

• Assist with cocktail creation and beverage-menu development

• Maintain strict recipes, specifications, and presentation standards

• Manage ordering, receiving, inventory, pars, rotation, and waste

• Help maintain beverage costs and accurate inventory records

• Keep the bar organized, stocked, clean, and service-ready

• Work hands-on behind the bar during busy services

• Develop working knowledge of Pomelo's sake and wine selections

• Partner closely with culinary and restaurant leadership

• Significant craft-cocktail and high-volume bartending experience

• Previous bar leadership or management experience

• Strong spirits, cocktail-technique, and bar-systems knowledge

• Excellent organization and attention to detail

• Ability to teach and enforce established recipes and standards

• Calm, dependable, self-motivated leadership style

• Strong communication and hospitality skills

• Sake and wine knowledge is preferred, but additional training will be provided
