Tempura Matsui is a Michelin-starred (One Star) tempura omakase restaurant in Murray Hill. We are seeking an enthusiastic, dependable Prep Cook / Line Cook for a Chef’s Assistant training track . This role includes structured, hands-on training toward becoming a tempura cook over time , working closely with the chef in a small, high-standard team.
You will start with zensai (appetizers) and sashimi prep/plating , then progress into tempura ingredient prep and station support as you grow.
- Mon: Closed
- Tue–Thu: Dinner service
- Fri–Sat: Lunch + Dinner service
- Sun: Open twice per month (limited Sundays)
Nights and weekends availability is required.
- Familiarity with Japanese cuisine (washoku, sushi, kaiseki, tempura)
- Fine-dining or upscale kitchen experience (not required)
- Strong knife skills , cleanliness, and attention to detail
- Support mise en place and service execution (prep, plating, station support)
- Prep + plating support for zensai and sashimi
- Assist with seafood/vegetable prep for tempura (portioning, station setup)
- Maintain a safe, sanitary, and organized work environment (labeling, storage, food safety)
- Communicate clearly with the team and support teammates as needed
- Open and close duties as assigned
- 3+ year restaurant kitchen experience preferred
- Strong fundamentals in cooking techniques and food preparation
- Team-oriented, hardworking, and detail-driven
- Clear verbal and written communication skills
- Must be authorized to work in the U.S.
