Assistant General Manager / Bar Manager

About the Opportunity

EHS Recruiting Company, with over 30 years of experience recruiting in the hospitality industry, is seeking an experienced  Assistant General Manager for an exciting new-opening, high-volume scratch kitchen and craft cocktail restaurant concept in the South Bay.

Backed by an established hospitality group, this is an excellent opportunity for a proven restaurant operator with strong financial acumen, a passion for hospitality, and the ability to lead a dynamic, bar-centric operation. The ideal candidate comes from a structured restaurant environment and understands how to implement systems, maintain high standards, and develop a strong team.

This role offers a clear path toward becoming a General Manager, with the opportunity to take on greater leadership responsibility as the hospitality group continues to expand.

Assistant General Manager / Bar Manager Key Responsibilities

• Support the General Manager in overseeing all daily restaurant operations, ensuring exceptional hospitality, consistent execution, and operational excellence.
• Lead front-of-house operations with a strong, visible presence on the floor, setting the standard for service and guest engagement.
• Oversee a team of approximately 40–55 front-of-house employees and 15–25 back-of-house employees.
• Manage bar operations, including cocktail execution, seasonal menu changes, beverage quality, and service standards.
• Monitor and control liquor, beer, and wine costs through accurate inventory, cycle counts, ordering, and variance analysis.
• Support P&L performance through cost controls, financial reporting, and effective management of labor, beverage, and food costs.
• Build and maintain strong vendor relationships to support purchasing, product quality, and cost efficiency.
• Implement and reinforce standard operating procedures, steps of service, training systems, and accountability standards.
• Recruit, train, coach, and develop team members while fostering a positive, high-performance culture.
• Maintain high standards for food quality, beverage execution, cleanliness, and guest satisfaction.
• Partner with leadership to establish operational systems and prepare the restaurant for continued growth.
• Take ownership of key operational areas while developing the skills necessary to transition into a General Manager role.

Assistant General Manager / Bar Manager Qualifications

• Previous experience as an Assistant General Manager, General Manager, or equivalent restaurant leader in a high-volume operation.
• Experience in a restaurant generating $4 million or more in annual sales preferred.
• Background with a structured restaurant brand or hospitality organization with established operating systems, training programs, and accountability standards.
• Strong financial acumen, including P&L management, cost analysis, inventory controls, and financial reporting.
• Demonstrated expertise in beverage cost management, including liquor, beer, wine, and cocktail programs.
• Working knowledge of food cost controls, purchasing, vendor management, and inventory procedures.
• Experience leading large teams in a high-energy, bar-centric or full-service restaurant environment.
• Strong floor presence with the ability to lead by example, coach employees, and maintain elevated hospitality standards.
• Proven ability to implement systems, maintain consistency, and hold teams accountable.
• Creative and guest-focused mindset balanced with operational discipline.
• Strong communication, organizational, and problem-solving skills.

Compensation & Career Growth

• Salary: $80,000–$90,000 annually.
• Restaurant Volume: annual sales of $4 million–$6 million.
• Leadership Scope: Approximately 55–80 front- and back-of-house team members.

• Training & Development: Structured onboarding, leadership shadowing, hands-on operational training, and continued development.
