Job Summary
We are seeking a Masa/Tortilla Production Cook to join the team at Escuela! In this position, you will be responsible for using high-quality dry corn to nixtamalize and grind in house for delicious and fragrant masa. The ideal candidate is experienced, attentive, and has extensive knowledge of making masa. If you have a passion for nixtamalization and masa production, we want to hear from you!

Duties and Responsibilities:

• Nixtamalizing Corn
• Grinding corn using/properly cleaning a molanito
• Experience with masa roller/corn tortilla machine2
• Flour Tortilla production
• Set up the kitchen with necessary tools and equipment
• Maintain appropriate levels of inventory
• Participate in daily kitchen opening/clean up
• Performs other duties as assigned by our chef team

Requirements:

Qualifications

• Previous experience in Masa Production is preferred.
• Ability to use professional-grade kitchen appliances and equipment.
• Advanced knowledge of cooking techniques and recipes.
• Strong organizational and time-management skills.
• Knowledge of food safety practices.
• Available for early morning shifts.
• Open to feedback and the ability to utilize it as a tool.
• Ability to meet the physical demands of the position, including standing for long periods and lifting up to 40 pounds.
• Texas Food Handlers Certification.
