The Sushi Cook is responsible for the preparation, presentation, and execution of high-quality sushi, sashimi, rolls, and other Japanese-inspired menu offerings for both restaurant service and large-scale banquet, convention, and catering events. This position supports the culinary team in delivering exceptional guest experiences while maintaining the highest standards of food quality, consistency, safety, and presentation in a fast-paced, high-volume hospitality environment.

In addition to à la carte restaurant service, the Sushi Cook plays a key role in preparing and executing sushi offerings for large conventions, VIP functions, receptions, and special events throughout the hotel.

What You’ll Do

Prepare sushi, sashimi, rolls, and related menu items according to established recipes and standards
Ensure food quality, freshness, and presentation meet Hyatt brand expectations
Safely handle and store seafood and ingredients following food safety guidelines
Set up and maintain the sushi station for service, ensuring cleanliness and organization
Maintain proper knife care and workstation sanitation
Communicate effectively with kitchen leadership and front‑of‑house teams
Assist with inventory, prep work, and restocking as needed
Follow all health, safety, and sanitation regulations
Support a collaborative, team‑oriented kitchen environment
