Grill Cooks (Night Shift & Weekends)

Job Summary We are looking for a reliable, hardworking, and skilled Hourly Yakitori Grill Cook to join our kitchen team. In this role, you will be the backbone of our grill station, responsible for the preparation, skewering, and precise live-fire grilling of chicken and vegetables over traditional Binchotan (Japanese charcoal).

Shift & Schedule Expectations
Job Type: Full-Time or Part-Time (Hourly)
Schedule: Must be available for afternoon prep shifts, evening service, weekends, and holidays.
Punctuality: Reliable transportation and strict adherence to scheduled clock-in/clock-out times are required.
Key Responsibilities
Grill Setup & Breakdown: Arrive on time to light the Binchotan charcoal, manage heat zones, and ensure the grill station is fully stocked for service. Clean and break down the grill at the end of the night.
Prep & Skewering: Efficiently portion and skewer chicken cuts (momo, mune, tsukune, etc.) and vegetables to meet daily prep pars. Maintain consistency in size and weight for even cooking.
Line Cooking: Grill skewers to order with speed and accuracy during high-volume rushes. Master the timing of tare (sauce) dips and shio (salt) seasoning.
Station Cleanliness: Maintain a clean, sanitary, and organized workspace throughout the shift in accordance with local health department codes.
Side Work: Complete assigned opening/closing checklists, including restocking charcoal, sweeping, and washing station-specific equipment.
Skills & Requirements
Experience: 1+ years of experience working as a line cook, prep cook, or grill cook. Experience with charcoal/wood-fire grilling or Japanese cuisine is a huge plus, but we are willing to train the right candidate.
Stamina & Physical Demands: Ability to stand for the entirety of an 8-hour shift, lift up to 40 lbs (charcoal bags/prep boxes), and work comfortably in a high-heat environment.
Pace: Ability to remain calm and work efficiently during fast-paced dinner rushes.
Certification: Valid food handler’s card/permit (or willingness to obtain one within 30 days of hire).
