Job Details The Wolf's Tailor of Id Est Hospitality Group is seeking back-of-house talent! We are hiring a full-time Morning Production Chef who is passionate about food and the hospitality industry. At least two years of prior culinary experience in a high-caliber environment are required to be considered for this role. This role requires early morning and weekend availability. This role is perfect for someone who thrives on volume, precision, and repetition — and takes pride in setting the entire kitchen up to succeed before service even starts. We aim to build and improve local food systems by focusing on local and regional ingredient procurement. Responsibilities of the Morning Production Chef

Break down primal cuts and portion proteins to restaurant specifications

Produce fresh pasta daily to standardized recipes and quality benchmarks

Maintain and manage active fermentation projects (schedules, temperatures, rotation, documentation)

Execute all prep to standardized recipes, portion sizes, and quality standards

Follow storage and rotation guidelines (FIFO) to minimize waste and maintain freshness

Manage time independently to complete a high volume of production tasks within a single shift, with minimal oversight

enforce proper food handling, storage, and labeling practices to prevent foodborne illness

2+ years prior culinary experience in fine dining or an environment of similar caliber

• Demonstrated butchery skills, including breaking down primal cuts and portioning proteins
• A "crusher" mentality: high output without sacrificing quality or consistency
• Comfortable working early mornings, largely independent of the evening line team
• Open availability — must have weekend availability
