Chicago Meat Authority (CMA) is proud to have celebrated 36 years in the food industry. Located in Chicago’s historic Stockyards, CMA is a forward thinking processor of value added beef, pork, and poultry items with a strong focus on selling the Healthcare, Hotel, and Institutional Markets (HRI), meat purveyors, and Multi-unit regional and national chains up to and including big box stores. In addition, CMA specializes in custom cuts for further processors including but not limited to grinding operations, deli manufacturers, and the prepared entrée market.
CMA is seeking Butchers for our meat processing facility. What You Get To DO Debone, cut and trim meat to specification while maintaining yield, throughput, and quality standards. Product includes but not limited to beef navels, beef briskets, pork picnics, pork hams, pork loins and poultry product. Further trimming of specific cuts of beef and pork after bones have been removed maintaining the same standards.

What We Want From You Butcher experience.
Perform all duties as required by production supervisor.
Follow CMA policies and procedures.
Required to work overtime (including some Saturdays).
Required to wear all personal protective equipment.
Meat processing and/or refrigerated manufacturing experience preferred.
Ability to work with cold materials in a cold, humid environment.
Follow Good Manufacturing Practices (GMPs).
Compensation Starting Rate: $18.41 per hour
