Position Description: POSITION SUMMARYThe Commissary Operations Manager is responsible for overseeing all commissary logistics, bulk production, transportation and quality control execution across multiple service channels.This is not a creative chef role. The menu, recipes, and systems are fully developed. Success in this position is defined by consistency, efficiency, inventory discipline, and the ability to scale production without compromising quality.CORE RESPONSIBILITIES:1. Commissary & Production Oversight–\tLead and manage all bulk production operations supporting restaurant and retail outlets–\tExecute daily, weekly, and par-based production schedules aligned with business volume–\tEnsure all recipes are followed with precision — no deviation from established standards–\tOversee prep teams to maintain speed, consistency, and accuracy in high-volume output–\tDrive readiness for peak days, holidays, and large-scale events2. Inventory Management (FIFO-Focused)–\tEnforce strict FIFO (First-In, First-Out) systems across all storage and production areas–\tManage weekly and/or biweekly inventory counts, including end-of-month reconciliation–\tMonitor product usage, yields, and waste to maintain tight cost controls–\tEnsure all products are properly labeled, dated, rotated, and stored–\tCollaborate with procurement to maintain appropriate pars and ordering cadence3. Quality Control & Standards–\tAct as the final checkpoint for all product leaving the commissary–\tMaintain chef-driven standards for taste, portioning, and presentation–\tConduct routine quality audits across all production categories (savory, bakery, breakfast, etc.)–\tIdentify and correct inconsistencies in product execution immediately–\tTrain and hold team accountable to established standard operating procedures4. Logistics & Distribution–\tOversee the flow of product from commissary to restaurant locations and events–\tCoordinate packing, labeling, and transportation standards–\tEnsure all deliveries are accurate, timely, and meet quality expectations upon arrival–\tBuild systems that support scalability for multi-unit growth5. Team Leadership & Development–\tLead, schedule, and develop a team of production cooks and support staff–\tMaintain a culture of accountability, urgency, and consistency–\tTrain team members on production standards, food safety, and inventory systems–\tPartner with leadership on staffing needs and performance management6. For a bonus to be earned for an applicable period, all required performance standards must be achieved.
